Chocolate Chip Oatmeal Cookies

I confess that where I live, I cannot find proper oatmeal, meaning flour made with oats, and whenever I happen to travel to the UK I always keep one 1kg or 2 free in my luggage. I found a great workaround though, to get as chewy oatmeal chocolate chip cookies as they can be: I take oat flakes and finely grind them. It sounds like a natural and logic substitute, but believe me, reinventing the wheel is not always as easy and straightforward as it looks: before having the final enlightenment, I had to try several times with oat flakes, but they always came out raw in the oatmeal chocolate chip cookie, no matter if I boiled or soaked the oat flakes beforehand. Grinding them was the best solution, I also carried out a test with the two types of flours and they are practically the same. So, after showing off, let’s go ahead with this oatmeal chocolate chip cookie recipe.
200gr oatmeal
100gr all-purpose flour
1 egg
3 tbsp runny honey
50gr extra-virgin olive oil
1 tbsp baking powder
Half tsp vanilla extract
200gr (dark or milk) chocolate chips
1 pinch of salt
Grated zest of one orange

The orange zest is not mandatory, but orange and chocolate are always a good match, so I would go for it. Also, the chocolate chips (but this applies to any chocolate chip cookie recipe) can be of dark or milk chocolate. If you are a chocolate lover like me, then you may have your preferences, but in the end, as long as it’s chocolate it will make no difference at all (yes, we are THAT bad). But ad my Italian grandma Assunta used to say, chi cucina solo rimane solo (who cooks alone, remains alone), think of your audience before making these chocolate chip oatmeal cookies: those who like chocolate but not really love it, are more likely to prefer milk rather than dark chocolate. If you are organized enough in the kitchen, you may want to make separate batches with dark and milk chocolate
Sift the white flour and the baking powder into a bowl, with the oatmeal, the chocolate chips and the pinch of salt and mix them together.
In a second bowl, add the egg and quickly beat it with a fork, then add the honey and mix them together. Add the oil, the vanilla extract and the orange zest, and mix well until amalgamated. Start adding the dry ingredients, two tablespoon at the time, and mixing until amalgamated.
Preheat the oven at 160ºC. Line a baking tray with oven paper and distribute spoonfuls of dough at an even distance. Flatten them with the palm of your hand or with the back of a slightly wet spoon. Bake for 15 minutes or until golden on the edges.
