Pumpkin Cookies Recipe

Is it Halloween yet? Well, not quite but I like to be on top of things so here you have my pumpkin cookies recipe.

Let’s start with the ingredients;

125gr butter
300gr flour
1 lemon, diced
2 tbsp marsala wine
2 eggs plus 2 yolks
600gr pumpkin
250gr sugar

As a first thing for these easy pumpkin cookies, let’s prepare the pastry (or is it called dough? What’s the line between the two?)
In a bowl, add the butter, 150gr sugar, 2 yolks and a pinch of salt, then mix everything and then add the whole egg, marsala wine, mix until amalgamated and put it in the fridge for one hour.

Now let’s take care of the pumpkin. My advice is, let the guys at the supermarket peel it and slice it for you, it may be a little more expensive, but these Halloween cookies only come once a year, right?
Now dice the pumpkin into 1cm pieces and cook it in little boiling water until tender, then add the lemon and the remaining sugar. Let it simmer on a low heat until the sugar is caramelised then drain the mix in a colander and let it cool there, so it will lose all the liquid.
Now it’s time to take the pastry (I decided it’s not cookie dough) for these pumpkin cookies out of the fridge. Dust the working surface with flour, then stretch the dough with a rolling pin until you have stripe of pastry which is at least 10cm wide and 4mm thick. Now it’s the tricky part. When the punkin has cooled completely, pour it at the centre of the pastry stripe and then seal the edges by gently pressing them with your fingertips.
Now, dust a knife with flour and cut the pastry into 4cm stripes. Preheat the oven at 180ºC, line a baking tin with oven paper and bake these healthy pumpkin cookies for 15 minutes, then let them cool and dust them with icing sugar.

Now here are two twists for you.

The first one, is to make these cookies become chocolate chip pumpkin cookies, by adding 100gr of chocolate chips to the dough.

OR

You can add 100gr of raisins. Soak them in warm water for 15 minutes, then drain and caramelize them with the pumpkin and the lemon.
