Healthy Pumpkin Chocolate Chip Cookies

I’ve never made pumpkin chocolate chip cookies recipe before, and I didn’t have any reference, so I have to admit this recipe was half-improvised, but as they say, fortune helps the daring (that’s the proverb, right?) and the result was excellent.

160gr butter, softened
180gr sugar
2 egg yolks
280gr flour, sifted
120gr potato flour or corn starch, sifted
300gr pumpkin, finely diced
1 tsp baking powder
100gr dark chocolate chips

This chocolate chip cookies recipe starts one or two hours before, because you will need to steam the pumpkin until tender first. I said steam and not boil, which is far quicker, but you would lose half of the flavour. When it’s ready let it cool to room temperature and then blend it with a food mixer.

Work the butter with the sugar until creamy and fluffy, then add the egg yolks, the mashed pumpkin, baking powder and the flours. Quickly mix just enough to bring the ingredients together , then add the chocolate chips.
Preheat the oven at 160ºC. Form small balls with the palms of your hands, then line them on a baking tray with enough distance from one another. Bake for 30-40 minutes, or until golden in top.
